An Ode to Dark Chocolate

Dark Chocolate is my passion,
One ounce per day is my ration
So rich, so soothing, so deep in flavor,
Each and every bite I savor

What more could I ask of you?

Scharffen Berger Chocolate Maker was founded in 1997 in San Francisco. Founders, Robert Steinberg and John Scharffenberger, started the company in Robert's kitchen with a few simple kitchen appliances and nearly 30 varieties of cacao. The two tested multiple combinations before perfecting a unique blend that they felt highlighted the true flavor of cacao. The first official batch of Scharffen Berger chocolate was made in their South San Francisco factory-using vintage European equipment. They had one goal − to create the richest, most flavorful chocolate by sourcing the best cacao in the world and using artisan chocolate-making methods.

Scharffen Berger was  the first ‘bean-to-bar' chocolate manufacturer established in the United States in the past 50 years. The process includes working with farmers and selecting beans to blend, roast and refine. Scharffen Berger is now part of The Hershey Company, acquired in 2005.

In the past few years, dark chocolate has been in the news as a health food, because of high level of anti-oxidants.  Some chocolates are known to be loaded with antioxidant polyphenols, which are though to help prevent heart disease by reducing "bad" LDL cholesterol, lowering blood pressure, and preventing unhealthy blood clotting. To receive these benefits, studies suggest you have to eat the dark variety, such as the the chocolates made by Scharffenberger.

In addition to its health benefits, what makes Scharffenberger especially appealing to the kosher consumer is the fact that many of the products are parve. Most Scharffen Berger chocolate items are certified OU kosher. And, the non-dairy status of several items allows for versatility in baking, creating desserts and of course just eating.

Unfortunately, and surprisingly, Hersheys does not provide an online up–to–date listing of certified kosher or parve products, nor do they have one to fax. We contacted their certifying agency, the OU (Orthodox Union) so that we could provide at least a partial listing of parve products for our readers. Since kosher certification often changes, do check the item label when purchasing. And, Hershey’s, please note – the kosher consumer is awaiting that complete kosher list!
